What Does Anerobic Process Coffee Mean?

Only the perfectly ripe cherries were used for the lot by our cherry selection team.  we put the cherries in a single Jacky Binn for 72 hours, sealing the bin.  After 72 hours of anaerobic fermentation, we moved the cherries to our raised drying tables.  There, the lot was looked after by a dedicated drying table staff member for the duration of its 35 days on the drying table.
